Cauliflower Power

What better way to continue with your New Year’s resolutions than to jump feet first into one of 2017’s hottest new food trends, cauliflower.

According to The James Beard Foundation, Zagat and Bon Appetite- Cauliflower is the new Kale. You can make just about any dish with the coveted ingredient- from quick appetizers to dips and soups- this veggie can even stand on its own, being served as a side and in some instances a main dish.

As described by the James Beard Foundation– “Maybe it’s the mild flavor that makes for a stellar blank canvas, or its comforting, starchy consistency which lends itself to standing in for rice or pizza crust” – one thing is for sure: The Cauliflower craze is among us. See some of the best restaurants to try this fresh new trend.

Bar Bombón is a little slice of Old San Juan all year round. From it’s bright, vibrant decor to its family style dining, the buffalo cauliflower tacos are the perfect example of how cauliflower can make its way into dishes from every culture. Made with cauliflower, green goddess dressing, black bean puree, avocados and chopped onions.

After 5pm, Plenty Café offers a savory Roasted Cauliflower dish that is as delicious to the taste as it is to the eye. Flavored with pickled fresno chilis, pomegranate seeds, pepitas and a house-charred scallion pesto, this is one cauliflower dish you won’t want to skip out on.

Although a steakhouse, Barclay Prime has a lot of delicious vegetable options, especially for their inventive side dishes. Their Roasted Cauliflower is served with a Gribiche Sauce (capers, cornichons, fines herbs, aioli), and topped with crispy shallots.
